People change because they have to...or want to.
Life would be really boring otherwise.
Perhaps it's for the best, seems to me like she is pretty unhappy with being annoyed, and I am not too sure you enjoy it either. Give it time, letting go is hard when you really love someone (been there...done that) but if it's not meant to be, then it's not.

Actually, I would say people tend not to change.
I would guess that now that the initial infatuation phase is over, she is comfortable enough to show her true nature, and you are just getting around to really noticing it.

I know the feeling. My boyfriend and I hardly have anything in common anymore.. he clings to little similarites as an excuse, like when we say something at the same time. Yet I find it so hard to let go, hum. Life's just sticky like that sometimes.

Or you could tell her that this is who you are and you have no intention of changing - take it or leave it. Of course, you would have to do the same with her and not give her a hard time about her red, red hair or anything else that doesn't go directly against you.
Then again, maybe I am just very strong on my sp variant.

I finally let go and split up with her :(.
She seemed somewhat happy......but i feel bad :(.
Now I have a gaping hole which can't easily be filled...
